This was the first time encountering the 1* Michelin Restaurant, Sra Bu Kiin Kiin at @siamkempinski , which we would have to admit, for a fine restaurant-in-hotel setting, the design and traditional Thai decor is rather outstanding. Warm lighting, white linen table cloths, silver velour table runners, sparkling glassware and winter flowers create a relaxed refinement but in theme with their menu, sparks nostalgia of fond winter times. Most glorious was the gazebo seating with ornate bronze cut Thai roof design. (Bangkok Foodies, book this table for your next romantic or dine-to-impress tryst).
Sra Bua by Kiin Kiin Head Chef Chayawee Suthcharitchan, in collaboration with Chef Henrik Yde-Andersen of Copenhagen’s famous Kiin Kiin restaurant, introduce the restaurant’s latest dining secrets as part of a new set dinner menu that is based upon the elements and flavours of the cooler climate in the winter months.
Winter Journey, comprising eight courses, which begins with Sra Bua by Kiin Kiin’s famous “street food” nibbles, such as soya meringue, moon food, chicken satay, Chiang Mai sausage, green curry and crab salad cornetto and selections of leaves of Thailand.
Highlights of the course would undoubtedly be the Pan-fried Mackerel, Baked Fermented Pickle,and Fresh Tomato Yum Dressing, which dubious diners were pleasantly surprised by the sharp and bright dressing combined with a fish which is typically considered to be ‘muddy’, was beautifully gentle and succulent.
The Tom Yum Soup by Syphon with Prawn Cracker, Shrimp Taco Lobster, Tofu Noodles set would be our next choice, fun to watch and interactive for fidgety foodies, but could possibly be considered gimmicky and over-done for some. Note; We would have loved to have real crispy worms than rice which mimicked them. ;)
The set dinner also features smoked salmon, bonito, wasabi cream, ponzu and cucumber; kra pao foie gras with basil hollandaise and crispy rice; and beef-glazed sweet soya sauce, pickled kumquat and crispy beef baked rice.

I work at a Big 4 accounting firm with a busy schedule, but I always make time to cook delicious food for my wife, Rachel, and our family and friends. Thai Pomelo Salad by Jimmy’s Table
Sauce Ingredients (食材):
1/4 cup Fish Sauce (魚露)
1/4 cup Vinegar (白醋)
1/4 cup Sugar (糖)
1/4 cup Garlic (大蒜) - minced
2 Red Chilis (小辣椒) - minced
4-5 Limes (青柠檬) - halved and squeezed for juice, seeds removed
1/2 cup Cilantro (香菜) - leaves only, chopped
1/2 cup - Mint (薄荷) - leaves only, chopped
1/2 cup -Basil (九层塔) - leaves only, chopped
Key Ingredients:
1 Chicken breast (鸡胸肉) - boiled
18 Shrimp (虾仁) - boiled
1 Pomelo or 4-6 grapefruit (柚子,葡萄柚) - peeled, fruit removed
Finishing Ingredients:
1/2 cup Cashews (腰果)
1/2 cup Peanuts (花生)
1/4 cup Deep fried shallots (炸小葱头)
1/4 cup Deep fried garlic (炸大蒜)
Steps:
1. Make the sauce by adding fish sauce, vinegar, sugar, minced garlic, minced red chilis and lime juice. Taste for a balanced salty, sweet, sour, spicy flavor. If it's too salty, add vinegar and sugar to dilute and balance. Add limes to make it more sour, chilis to spice it up and fish sauce for more funkiness!
2. Add chopped cilantro, mint and basil to the sauce.
3. Boil chicken breast and hand peel off pieces of chicken into thin strips of chicken. Chicken soup can be cooled and saved as chicken stock for other dishes.
4. Devein and remove shrimp shell. Boil shrimp.
5. Peel pomelo or grapefruit for just the meat of the fruit
6. Mix pomelo/grapefruit, shredded chicken, shrimp. Add in sauce. Add in additional cilantro, mint or basil depending on how much herbs you like. Toss and mix the salad. If you plan to serve today, continue with next step. This salad can be pre-made and stored in the refrigerator. Add in steps 7 & 8 when ready to serve.
7. In a dry frying pan, heat up cashews and peanuts until warm and slightly brown and toasted. Add into salad.
8. Add in deep fried shallots and garlic for extra flavor.
9. Toss together and serve.

- Soups (lightly sautee your favorite soup veggies in oil and garlic, pour diced tomatoes into the pot, then fill the empty tomato can with water and add one cube of soup stock of your choice, throw in your desired seasonings, bring to a boil and simmer. you can add rice, quinoa, gains, shredded chicken to make it a hearty meal.)
- Stews (for beef, lamb, and pork, I cut my vegetables large, season them first with cumin, curry spice, cinnamon, salt, pepper, paprika, etc to make a fragrant mix, then add tomatoes and water, and simmer until liquid has dissolved and the mixture is thick enough to be a stew.)
- Salsa (Use half a can, pulse in a mixer with red onion, cilantro, garlic, green pepper, red chiles, lemon, salt, pepper, and a bit of cumin for a more tex-mex flavor)

Most supermarkets have them, and they are very versatile, cheap, and easy to use.
●Yakiniku Sauce:
You can choose any kind you like! When in doubt, the popular Yakiniku chain "Gyukaku" has a sauce in the supermarket that's pretty good. Use this on "grilled" and "charred" meats. Tastes great over rice. Make a "Yakiniku Bowl" with charred carrots, cabbage, onion, green pepper, and slices of beef or pork.
●Ponzu: I prefer Yuzu, but you won't be missing out on too much if they don't stock it. Regular Ponzu works. Use this on steamed veggies with lighter flavors, or in sautees with Asian veggies (bok choy with garlic topped with ponzu, baked white fish with salt and ponzu, or daikon and pork sauteed with ponzu is great!) Can be mixed with olive oil, salt, and pepper to make a salad dressing too!
●Veggies - Try to pick a few greens, and then one veggie of each color. I try to plan for one raw-green (for salads), one wilting-green (for soups and stir-fries), and one firm-green (for baking grilling) per shop.
Green: Lettuce, Baby Leaf, Spinach, Bok Choy, Komatsuna, Asparagus, Zucchini, Green Pepper, Kale, Cucumber, Cabbage, Avocado
Purple: Red Onion, Eggplant, Purple Turnip, Satsumaimo (Sweet Potato), Purple Cabbage (great for adding color).
Red: Tomatoes, Red Peppers, Beets, Beni Daikon (Red Radish)
Orange: Carrot, Pumpkin, Orange Pepper, Orange/Yellow Fruit Tomatoes
White: Daikon, Turnip, Cauliflower, Renkon (Lotus Root), Bean Sprouts, Potato, Onion, Sato-Imo, Yama-Imo,
Brown: Gobo (burdock root), Mushroom
●Buy & Freeze:
- A loaf of bread or two (Japanese bread tends to come in slices instead of loaves so buy accordingly.)
- Meats (Chicken Breasts are the most versatile AND cost-effective IMO.)
- Frozen Seafood (S&B has a paella seasoning! if you can find it, this is a nice way to utilize rice, veggies, and seafood)
- Frozen naughty snacks like pizza, dorayaki, frozen fried rice, emergency instant meals, etc can go here too.
●Pasta and Rice are good to have, but if you don't have a rice cooker in your apartment, you can buy a few microwavable instant-packs from your supermarket or convenience store and store those instead.
